Some of the most interesting Champagnes come from families who have been quietly doing things their own way for decades. Guy Larmandier is one of them. Based in Vertus, at the southern end of the Côte des Blancs, the family has been producing estate-grown Champagne since 1976. Neal Rosenthal recognized something special here and began importing the wines in 1982, long before grower Champagne became a familiar term among collectors. Today, the family continues to make wines that put their vineyards ahead of marketing, with a style built around freshness, balance and the unmistakable character of Champagne's chalky soils.

Vertus is a Premier Cru village known for Chardonnay with both precision and generosity. This Brut Zéro is composed of 90% Chardonnay and 10% Pinot Noir, bringing together the bright mineral character of the Côte des Blancs with a little extra roundness from the Pinot Noir. The wine spends three years aging on its lees before disgorgement, allowing its fine bubbles and subtle bread-like complexity to develop naturally. With no sugar added at disgorgement, there is nothing to disguise the fruit or the vineyard. Yet this is not an aggressively austere Champagne. Vertus has a generosity that gives the wine a surprisingly supple texture.

In the glass, there is fresh green apple, lemon zest, white flowers and a lovely suggestion of toasted bread. The bubbles are delicate, the acidity is lively and the finish has that unmistakable chalky, saline quality that makes Champagne so compelling with food. We love how it moves between precision and pleasure. It is dry and mineral-driven, certainly, but there is enough fruit and texture to make it welcoming rather than severe. This is the kind of Champagne we would open with oysters, serve alongside dinner or pour simply because a good bottle of Champagne never really needs an occasion.
